Brownie Banana Bread

 



Here's a quick and easy recipe we tried out the other day. I had some bananas that were ripening rapidly so I thought about making banana bread, but I also really wanted to make brownies. I couldn't decide between the two, so I just combined them. The results were pretty extraordinary.

Ingredients
1 box brownie mix
2-3 medium size ripe bananas, mashed
2 eggs
1 stick (1/2 cup) unsalted butter, melted


Directions
-Preheat your oven to 350°
-In a medium bowl, mash your bananas and set aside
-Add brownie mix, eggs, and butter to a large bowl and mix well
-Add mashed bananas to brownie mix and stir well
- Grease a loaf pan with nonstick cooking spray and add batter to pan
-Bake for 50 minutes (be sure to check that bread is baked through with toothpick, put in oven 5 minutes longer if needed)
-Let bread cool for 30 minutes and then carefully remove from pan to allow to cool thoroughly 
- Pre-slice and store in airtight container
