Sweet & Spicy Slow Cooker Chicken Thighs

We are diving right in to the recipe! Are you ready?

1 1/2- 2 lbs boneless & skinless chicken thighs 
1/2 cup ketchup
1/3 cup soy sauce
1/4 cup honey
1 teaspoon olive oil
Sriracha (to taste)
2 Tablespoons cornstarch
1/4 cup water

Place chicken thighs in the slow cooker insert. Mix the ketchup, soy sauce, honey, and olive oil together in a small bowl. Pour the mixture over the top of the chicken and then drizzle Sriracha on top. Put the lid on the  slow cooker and cook on low for 6 hours or on high for 3-4 hours. During the last hour of cooking, mix the cornstarch and water together and add to the sauce in the slow cooker. 

We served our chicken thighs with yellow rice and broccoli, but really any rice and veggies would pair well.
